Salmon Salad with Lemon Vinegritte

Ingredients
  • 1 1/2 lbs salmon
  • romaine lettuce
  • 1 cucumber
  • 1 tomato
  • lemon pepper
  • garlic powder
  • kosher salt
  • 1/2 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon minced shallot
  • 1 1/2 teaspoons Dijon mustard
  • 1/2 teaspoon grated lemon peel
  • 1/2 teaspoon sugar
  • salt and pepper
Directions
  1. Season both sides of salmon with lemon pepper, garlic powder and kosher salt. Cook salmon under the broiler until it starts to brown. Flip and broil the other side until it also is browned. Remove from the oven and set aside.
  2. Peel the cucumber, slice and cut into quarters.
  3. Chop the tomato.
  4. Add olive oil, lemon juice, shallot, mustard, lemon peel and sugar to a jar with a tight lid and shake to emulsify. Add salt and pepper to taste.
  5. Layer salad with romaine, cucumber, tomato, salmon and dressing.
