Easy Chicken and Veggie Curry

  1. Sprinkle chicken with soy sauce to marinate. Saute chicken in 2 tablespoons of veg oil, on high, in two batches. Remove from heat.
  2. Add another tablespoon of veg oil to the wok. Put in onion and stir a few minutes. Add garlic and ginger. Stir till fragrant.
  3. Add eggplant, water chestnuts and red bell peppers to the onion, garlic and ginger. Stir until the veggies are cooked (2 mins or so).
  4. Add curry paste and juice from the lime to the veggies. Mix to coat. Add chicken, coconut milk and corn starch. Mix to combine. Reduce sauce till desired thickness.
  5. Remove from heat. Stir in thai basil/cilantro. Serve over cooked white rice.
  6. Watch trashy TV. You know you wanna.
