Shrimp with Spinach and Tomatoes over Pasta

Shrimp, sauteed in garlic and olive oil, and spinach in a savory tomato sauce over angel-hair pasta
  1. Fill a large pot with water and bring to a boil. Salt the water and add the pasta. Return to a gentle boil.
  2. Heat a large, deep skillet or wok on medium high. Add olive oil, garlic, and red pepper. Saute until fragrant.
  3. Working in small batches, saute the shrimp until pink. Remove and reserve. Repeat until all the shrimp is cooked, adding olive oil if needed.
  4. Reduce heat to medium and de-glaze the pan with a few tablespoons of water or white whine, scraping up any brown bits, then add the tomatoes and bring to a simmer, stirring occasionally.
  5. Add the reserved shrimp to the tomato mixture and heat through.
  6. Remove from heat and add the baby spinach, stirring to combine. Cover and allow the spinach to cook slightly until it begins to wilt.
  7. Serve over your drained, cooked pasta. Enjoy!
