RECIPE: Crockpot Beef Stroganoff

Arizonans are losing their minds today! Since we only get 5 days of rain a year, about 90% of us considered staying in bed this morning and sending our spouses out to get us fancy hot chocolate to sip. Oh and also, can you bring me my fluffy socks and put a warm puppy up against me?

Oh hey, spousy type person? Can you also take care of dinner for tonight while you’re up? I swear it won’t take too long. It’s crockpot after all. Just cut up some meat and veggies, throw them in there with some spices and other stuff, and then jump back in bed because really, my feet are starting to get cold.

Thanks love. I’m so happy here in bed with my socks, dog and cocoa. And, that dinner is already starting to make the house smell delicious. Now snuggle in and keep me warm. Ahhh, perfect.

Oh wait, one more thing sweetie. Can you run and get me my laptop so I can write my 1,667 words for NaNoWriMo for today? I swear if I get it done now, I’ll be fun and act human the rest of the day. It’ll be ugly otherwise.

OK, now we’re perfect. Snug in babe. Oh, do you mind getting me just one more thing….

Beef stroganoff from Cooking Light. The flavor on this was out of this world. I wouldn’t change a thing. It was even better the next day as leftovers. I highly recommend. 5 out of 5 glasses of big-bodied wine.

Crockpot Beef Stroganoff

Ingredients
  • 1 (1-pound) top round steak (1 inch thick), trimmed
  • 1 cup chopped onion
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons Dijon mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1 (8-ounce) package sliced mushrooms (about 2 cups)
  • 3 garlic cloves, minced
  • 1/3 cup all-purpose flour
  • 1 cup beef broth
  • 1 (8-ounce) container low-fat sour cream
  • 2 cups hot cooked medium egg noodles (about 4 ounces uncooked)
Directions
  1. Cut steak diagonally across grain into 1/4-inch-thick slices. Place steak and next 8 ingredients (though garlic) in a 3-quart electric slow cooker; stir well.
  2. Lightly spoon flour into a dry measuring cup; level with a knife. Place flour in a small bowl; gradually add broth, stirring with a whisk until blended. Add broth mixture to slow cooker; stir well. Cover with lid; cook on high-heat setting 1 hour. Reduce to low-heat setting, and cook 7 to 8 hours or until steak is tender. Turn slow cooker off; remove lid. Let stroganoff stand 10 minutes. Stir in sour cream. Serve stroganoff over noodles.
Notes

I doubled this recipe and made it in my large crockpot. Tons of delicious leftovers!
