RECIPE: Applesauce

During the holidays when I was young, my grandfather would visit. And he’d always bring an extra suitcase filled entirely with apples from orchards near his home. And he’d make applesauce.

I remember him peeling apples, leaving one long apple peel string. I cheat. This time, we used Ken’s fancy apple peeler, slicer machine. Ooh.

It allĀ  started with the annual apple tasting at Portland Nursery.

I’ve attended for several years now, grading apples and pears and tasting local honey and ciders. Last year I concentrated on pies. This year? We made applesauce with the bounty.

Simple! Apples in a pot. Add water. Lemon. Vanilla. And cinnamon. (No sugar, yippee!)

That’s it! Just wait and let it simmer down. Stir so not to burn the bottom. And love the smell of fall — and childhood — that fills your home. It turns out this waiting time, when it’s raining outside and temperatures are in the 50s, is the ideal time to enjoy tea and knit.

Except, of course, I don’t know how to knit. This apparently surprises people. Everyone thinks this is something I should be able to do. But when I googled a video looking for instructions on how to purl? I actually spelled it “pearl.” Ya, clearly I don’t know how to knit. And frankly? It scares me. Lots of math and mistakes that are easy to see.

So I signed up for a knit class. And, on weekday evenings, eight women have met at the local yarn boutique, yapping and eating and getting instruction. So here I go. Scarf #1 underway, while the applesauce cooks. Wish me luck. And math that adds up.

Rating: 4 of 5 glasses of cider. I’d have liked to try more spices. Nutmeg? I’ve read about cardamom, too. But overall? It’s tart, simple and healthy. LOVE.

  • 9 large apples, peeled, cored and sliced
  • What type of apple? This depends on your taste. Sweet? Tart? Maybe both. (As this doesn’t have sugar, I think sweeter apples work best.)
  • 1 1/C Water or apple cider
  • 2 tsp cinnamon (I probably double that, but it’s just me)
  • Juice of 1 lemon
  • 1 tsp vanilla extract
  1. Peel, core and slice the apples.
  2. Add the apple slices to a pot.
  3. Add water, cinnamon, lemon and vanilla.
  4. Simmer. And stir. Make sure it doesn’t stick to the bottom.
  5. Let cook about 20 minutes, or until apples have broken down entirely.
  6. Taste and add more spices to taste, if you’d like.
  7. Some folks will run it through a food processor for smoothness, but I love the chunks. (And don’t have a food processor anyway!)
